The texture of the wrapper is just right: thin, but not too fragile; smooth and supple; with just a hint of chewiness. The filling has a lovely balance of sweetness and saltiness—you’d never guess that it’s made with soy sauce!

But what really gets me going about these dumplings is how they use their ingredients. The pork is cooked perfectly—tender with just the right amount of fat—and the shrimp adds a subtle briny flavor that compliments it perfectly. And those shiitake mushrooms? They’re cooked so well that they’re almost meaty themselves!
